The Story

Meatology LLC is about traditional, quality, natural prime meat products.  We bring the days of home-made, high quality prime meat products back from myth to reality.  Our recipes are sourced from the southern European Balkan region. Authentic, traditional, family recipes, passed along from generation to generation for centuries.  By combining these old-world recipes with a touch, a food science and USDA standards, the magic of Meatology LLC was born.

Butcher Pista, of Hungarian heritage, was the son of a butcher and sausage maker. He became a resident of the small town of Bor (Pine, Serbia) in 1927.  Bor is populated with people of many different backgrounds and ethnicities. The cultural diversity is reflected in the traditional cuisine from this region. The culinary legacy continued with Pista’s grandson, Stevan Kis (Kish), who makes meat products in Bor with his grandfather’s recipes.

Our “Pork BBG sausage” recipe orginated with the Kis family. It is made with pork shoulder and back fat, and encased in natural lamb casing. This traditional recipe is also influenced by the city where it is proudly made today, Chicago, Illinois.

The history of Pirot, a town in Serbia, dates back before the Roman era. The town is surrounded by mountains, enhanced by rivers, and rich with architecture. Many traditional and gourmet specialties were born in Pirot. This sausage recipe, made with dry garlic, originated with the Krstic family. It is made with pork shoulder, beef chuck roll and pork back fat, encased in natural lamb casing, and balanced by the culture and modern flavors of Chicago.
